Ingredients
1 cup Chopped walnuts (optional, divided)
2 cups Wholesome Yum Blanched Almond Flour
1/4 cup Wholesome Yum Coconut Flour
1 tbsp Baking powder
2 tsp Cinnamon
1/2 tsp Xanthan gum
1/4 tsp Sea salt
1/2 cup Unsalted butter (softened)
2/3 cup Besti Monk Fruit Allulose Blend
4 large Eggs (at room temperature)
1/2 cup Unsweetened almond milk (at room temperature)
2 tsp Banana extract
Instructions
- Preheat the Oven: Preheat your oven to 350°F (176°C). Line an 8.5×4.5-inch loaf pan with parchment paper, ensuring it hangs over two opposite sides for easy removal.
- Combine Dry Ingredients: In a large bowl, whisk together the almond flour, coconut flour, baking powder, cinnamon, xanthan gum, and sea salt.
- Cream Butter and Sweetener: In another large bowl, use a hand mixer to beat the butter and sweetener until light and fluffy.
- Add Wet Ingredients: Beat in the eggs one at a time, followed by the almond milk and banana extract, mixing well after each addition.
- Incorporate Dry Ingredients: With the mixer on medium speed, gradually add the dry ingredient mixture to the wet ingredients. Mix until a thick, uniform batter forms.
- Add Walnuts: Fold in 3/4 cup chopped walnuts.
- Transfer to Pan: Spread the batter evenly into the prepared loaf pan, smoothing the top with a spatula. Sprinkle the remaining chopped walnuts over the top and gently press them into the surface.
- Bake: Bake for 30-40 minutes, or until the top is golden. Cover the top loosely with foil, then continue baking for an additional 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Slice: Allow the bread to cool completely in the pan before removing it. Slice and enjoy!
