What Is A Chaffle?
A chaffle is the delicious combination of cheese and waffles — hence, the name “chaffle”! Originally, chaffle recipes used just cheese and eggs, but I found them to be a bit too eggy for my taste. To perfect the texture, I add almond flour and psyllium husk powder along with the eggs and cheese. This makes the chaffle taste much more like a traditional waffle, so much so that even my husband and kids couldn’t believe it was keto-friendly!

  • Shredded Cheese – You can use any type of cheese, but mozzarella is the most commonly used because of its neutral flavor, making it ideal for both sweet and savory chaffles. For savory versions, cheddar and other keto-friendly cheeses work well. If you want extra creaminess, you can add a bit of cream cheese, but only in addition to the shredded cheese, as it’s the shredded cheese that creates the crispy texture.
  • Eggs – The basic ratio is one large egg for every 1/2 cup of shredded cheese.

The Best Basic Chaffle:
If you want your chaffles to taste more like traditional waffles, this is the recipe to try! This version has a neutral, bread-like flavor—neither sweet nor savory—which makes it perfect for sandwiches.

  • Eggs & Cheese – Just like the 2-ingredient version above, these are the base ingredients for the chaffle.
  • Almond Flour – Only 2 tablespoons of almond flour are needed, but this addition helps create that traditional waffle texture. Make sure to use blanched, finely ground almond flour for the best results. I always use Wholesome Yum Blanched Almond Flour.
  • Psyllium Husk Powder – Adding just 1/2 teaspoon gives the chaffles a chewy texture. You can substitute golden flaxseed meal if needed.
  • Baking Powder – This helps create a fluffier, less dense chaffle. Be sure to use baking powder (not baking soda), or you might end up with an unpleasant aftertaste.

How To Make Chaffles

  1. Preheat – Start by preheating your waffle iron. It’s important that the waffle iron is hot when you add the batter, so the chaffle cooks immediately and forms a crispy exterior. You can prep your ingredients while it heats up.
  2. Mix – Combine all your chaffle ingredients in a bowl to create the batter. You can use the basic chaffle recipe above or try one of the flavor variations listed below. (Be sure to check the recipe card at the bottom for precise measurements!)
  3. Cook – Scoop the batter into the waffle iron, ensuring it covers the surface evenly. Close the waffle maker and cook until the chaffle is browned and crispy. Keep in mind, the chaffle will crisp up even more as it cools. Enjoy!

  1. Garlic Parmesan – Combine mozzarella, parmesan, egg, minced garlic (or garlic powder), Italian seasoning, and baking powder. These taste like garlic bread in waffle form! For extra flavor, top them with melted mozzarella, grated parmesan, and a sprinkle of parsley.
  2. Cinnamon Sugar (Churro) – Mix mozzarella, egg, almond flour, psyllium husk powder, baking powder, butter, Besti sweetener, cinnamon, and vanilla. These taste like churros! You can enjoy them whole or cut them into sticks for that classic churro experience.
  3. Pumpkin – Blend cream cheese, mozzarella, egg, Besti, coconut flour, pumpkin pie spice, baking powder, and vanilla. I love using homemade pumpkin pie spice for extra flavor, but store-bought works too. Top them with whipped cream, a sprinkle of cinnamon, and keto maple syrup for a perfect fall treat.
  4. Jalapeno Popper – Combine cream cheese, cheddar, egg, baking powder, bacon bits, and jalapenos for a spicy kick! These are a reader favorite—perfect with melted cheddar, crispy bacon, and fresh jalapeno slices.
  5. Pizza Chaffles – Add seasonings and your favorite pizza toppings (think marinara, mozzarella, and pepperoni) to the basic chaffle recipe for a pizza-inspired snack.

  • 1 clove Garlic (minced; or use 1/2 clove for milder garlic flavor)
  • 1/2 tsp Italian seasoning
  • 1/4 tsp Baking powder (optional)

Cinnamon Sugar (Churro) Chaffles:

  • 1 large Egg
  • 3/4 cup Mozzarella cheese (shredded)
  • 2 tbsp Wholesome Yum Blanched Almond Flour (or 2 tsp coconut flour)
  • 1 1/2 tbsp Unsalted butter (melted, divided, 1/2 tbsp for the batter + 1 tbsp for topping)
  • 5 1/2 tbsp Besti Monk Fruit Allulose Blend (divided, 1 1/2 tbsp for the batter + 1/4 cup for topping)
  • 1 1/4 tsp Cinnamon (divided, 1/2 tsp for the batter + 3/4 tsp for topping)
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Psyllium husk powder (optional, for texture)
  • 1/4 tsp Baking powder (optional)

Pumpkin Chaffles:

  • 1/2 oz Cream cheese
  • 1 large Egg
  • 1/2 cup Mozzarella cheese (shredded)
  • 2 tbsp Pumpkin puree
  • 2 tbsp Besti Monk Fruit Allulose Blend
  • 3 tsp Wholesome Yum Coconut Flour
  • 1/2 tbsp Pumpkin pie spice

  • 1 oz Cream cheese
  • 1 large Egg
  • 1 cup Cheddar cheese (shredded)
  • 2 tbsp Bacon bits

  • 1/4 tsp Baking powder (optional)

Instructions:

  1. Preheat the Waffle Iron – Heat your mini waffle iron for about 5 minutes, until it’s hot and ready for use.
  2. Prepare Cream Cheese (if needed) – If the recipe calls for cream cheese, place it in a bowl and soften it by microwaving for 15-30 seconds or by using a double boiler until it’s easy to stir.
  3. Mix the Batter – Combine all the chaffle batter ingredients (except toppings, if any), including the softened cream cheese, if you’re making a version that requires it.
  4. Scoop the Batter – For a regular waffle maker, use about 1/2 cup of batter. For a mini waffle maker, use about 1/4 cup. Scoop the batter onto the waffle iron, spreading it out to cover the surface.
  5. Cook – Close the waffle maker and cook the chaffles for 3-4 minutes until they are browned and crispy. (Check the texture by gently pressing down or using the method mentioned in the post above for testing doneness without opening the waffle maker.)
  6. Cool – Carefully remove the chaffle from the waffle maker and let it cool to crisp up further. Repeat the process with the remaining batter, if applicable.
  7. Churro Chaffle Special Instructions – For churro-style chaffles, mix Besti with cinnamon for the topping. Once the chaffles are cool (but not hot), brush them with melted butter and sprinkle the cinnamon “sugar” topping over them. Alternatively, dip them directly into the topping.
